This light weight and stylish little knife looks like it might be a mini cleaver, however it isn’t. It’s called the Senzuo Usui and it is adored across Japan as being the best knife for cutting vegetables. The stainless steel blade is almost entirely flat, with only a slight bend to increase sharpness. And the bevel is at the front of the blade to allow a finer, more precise cut, and to aid in chopping or slicing vegetables without cracking them.
